Ingredients

  • 1 1/2 lbs fresh green beans trimmed, 680g
  • 1/2 cup thinly sliced shallots (from about 2 medium shallots) 50g
  • 2 tbsp olive oil or walnut oil 30ml
  • 1 tsp finely grated lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup walnut halves or pieces 60g
  • 1/3 cup dried cranberries 40g
  • 1/4 cup water 60ml
  • 2 tbsp fresh lemon juice 30ml
  • 1/4 cup chopped fresh parsley for garnish, optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • On a large rimmed baking sheet, combine the trimmed green beans, sliced shallots, oil, lemon zest, salt, and pepper. Toss well until everything is evenly coated.
  • Spread the green beans in a single layer on the baking sheet. Roast for 10 to 12 minutes, until the beans are bright green and just starting to become tender.
  • Remove the baking sheet from the oven. Sprinkle the walnuts and dried cranberries over the beans and toss everything together.
  • Return the baking sheet to the oven and continue to roast for another 5 to 7 minutes, until the beans are tender-crisp.
  • Carefully remove the pan from the oven again. Pour the water and lemon juice over the beans and toss to combine.
  • Roast for a final 3 to 5 minutes, until most of the liquid has evaporated and the beans are lightly glazed.
  • Transfer the green beans to a serving dish, garnish with fresh parsley if using, and serve warm.

Notes

For the best results, use a baking sheet large enough to hold the green beans in a single layer. This helps them roast instead of steam, ensuring they don't become soggy.
Feel free to substitute pecans for the walnuts or dried cherries for the cranberries depending on what you have on hand.
The beans should be tender but still have a slight bite. Adjust the roasting time by a minute or two if you prefer them softer.
You can trim the green beans a day or two in advance and store them in the refrigerator to save on prep time.
