This recipe brings together tender-crisp green beans, the crunch of walnuts, and the sweet chewiness of dried cranberries. The dish is coated in a simple, bright dressing made with lemon and shallots, all roasted together on one pan.
It’s a wonderful choice for a holiday table but quick enough for a weeknight, ready in about 35 minutes. Roasting everything on a single sheet pan also makes cleanup very straightforward.
Why is Roasted Green Beans with Cranberries a Must-Try?
Roasting in stages: Adding the walnuts and cranberries partway through cooking prevents them from burning while the beans become tender.
A simple glaze: Finishing with lemon juice and a splash of water creates a light glaze that coats the beans without making them soggy.
One-pan method: The entire dish is prepared on a single baking sheet, which means less time spent on cleanup after dinner.
Ingredients for Roasted Green Beans with Cranberries
• Green Beans: Fresh green beans work best. You can use pre-trimmed beans to save time. Frozen green beans are not recommended as they will release too much water.
• Walnuts: Shelled walnut halves or pieces are fine. Pecans also work well as a substitute.
• Oil: Olive oil is a great all-purpose choice. For a nuttier flavor, you can use walnut oil.
• Shallots: Their mild, sweet flavor is ideal here. If you don’t have shallots, you can use a small, thinly sliced red onion.
• Dried Cranberries: These add a nice chewiness and sweet-tart flavor. Dried cherries would be a good alternative.

How to Make Roasted Green Beans with Cranberries
Step 1: Roast the Green Beans
First, toss the green beans with shallots, oil, and lemon zest on your baking sheet. Spread them into a single layer and roast until they just start to get tender and bright green.
Step 2: Add Toppings
Next, remove the pan from the oven and sprinkle the walnuts and cranberries over the beans. Give everything a quick stir to combine and return the pan to the oven to continue roasting until the nuts are lightly toasted.

Step 3: Create the Glaze
For the final step, add the lemon juice and water directly to the hot pan. Roast for just a few more minutes until the liquid has mostly evaporated, leaving the beans with a light, flavorful glaze.
What to Serve with Roasted Green Beans with Cranberries
This side dish pairs well with roasted chicken, turkey, or a simple pork loin. It’s a versatile addition to almost any main course.
Expert Tips for Roasted Green Beans with Cranberries
For the best results, use a baking sheet large enough to hold the green beans in a single layer. This helps them roast instead of steam, ensuring they don’t become soggy.
Feel free to substitute pecans for the walnuts or dried cherries for the cranberries depending on what you have on hand.
The beans should be tender but still have a slight bite. Adjust the roasting time by a minute or two if you prefer them softer.
You can trim the green beans a day or two in advance and store them in the refrigerator to save on prep time.
How to Store and Freeze Roasted Green Beans with Cranberries
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven or in a skillet over medium heat until warmed through. This dish does not freeze well.

Roasted Green Beans with Cranberries Recipe FAQs
Can I make this ahead of time?
Yes, you can roast the beans and toppings, then cool and refrigerate. Just before serving, reheat on a baking sheet in the oven and add the lemon juice and water to create the glaze in the last few minutes.
Can I use different nuts or berries?
Absolutely. Toasted pecans or almonds are great substitutes for walnuts. Dried cherries or even golden raisins can be used instead of cranberries.
Why are my green beans soggy?
This can happen if the beans are overcrowded on the pan. Be sure to use a large enough baking sheet so they can lie in a single layer, which helps them roast instead of steam.
