- 32 ounces frozen tater tots 900 g
- 8 slices bacon cooked and crumbled
- 8 large eggs
- 3/4 cup whole milk 180 ml
- 1 1/2 cups shredded cheddar cheese divided, 170 g
- 1/4 cup finely chopped yellow onion 40 g
- 1/2 cup sliced scallions divided, 50 g
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon red pepper flakes optional
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with nonstick cooking spray or butter.
Spread the frozen tater tots evenly across the bottom of the prepared baking dish.
In a large mixing bowl, whisk the eggs and whole milk together until smooth.
Stir in the chopped yellow onion, half of the sliced scallions, salt, black pepper, onion powder, red pepper flakes, crumbled bacon, and 1 cup (115 g) of the shredded cheddar cheese.
Pour the egg mixture evenly over the frozen tater tots in the baking dish.
Bake for 40 to 45 minutes, or until the eggs reach a safe internal temperature of 160°F (71°C) and the center is set.
Remove the dish from the oven and sprinkle the remaining 1/2 cup (55 g) of cheddar cheese over the top.
Return to the oven for 5 minutes until the cheese melts.
Garnish with the remaining scallions before slicing and serving.
For food safety, the egg mixture must reach an internal temperature of 160°F (71°C). Check the center of the casserole with an instant-read thermometer.
You can cook the bacon in advance or use store-bought bacon bits to save time.
If the top browns too quickly before the eggs are fully cooked, cover the dish loosely with aluminum foil.
