  • 2 cups Fresh Spinach Substitute with baby kale or Swiss chard if desired
  • 1 cup Ricotta Cheese Cottage cheese can be used for a lighter version
  • 1/2 cup Parmesan Cheese Pecorino Romano also works well
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used for a more robust taste
  • 1 teaspoon Salt Adjust to your taste for the best flavor balance
  • 1 teaspoon Black Pepper Adjust to your taste for the best flavor balance

For Finishing Touches

  • 1 each Egg For egg wash, swap for plant-based milk for a vegan option
  • 1 tablespoon Olive Oil Optional for sautéing spinach

Instructions
 

Preparation and Baking

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Sauté the fresh spinach in a skillet with olive oil over medium heat until wilted, about 3–4 minutes.
  • Mix the sautéed spinach, ricotta, Parmesan, garlic powder, salt, and pepper in a bowl until smooth.
  • Unfold the thawed puff pastry and cut it into 4-6 squares.
  • Fill the center of each square with 1-2 tablespoons of the spinach-ricotta mixture, fold over, and seal the edges with a fork.
  • Brush the tops of the pastries with the beaten egg for a glossy finish.
  • Bake in the preheated oven for 20–25 minutes until puffed and golden brown.
  • Cool for 5 minutes before serving.

Notes

Serve with a refreshing tzatziki on the side for a delightful contrast.
