Ingredients
  

For the Beef and Base

  • 3 pounds Beef Chuck Roast look for good marbling
  • 6 ounces Bacon or pancetta for a twist
  • 1 large Onion yellow or white
  • 4 cloves Garlic fresh

For the Sauce

  • 2 cups Red Wine Burgundy or Pinot Noir
  • 3 cups Beef Broth low-sodium recommended
  • 2 tablespoons Tomato Paste adds depth

For the Vegetables

  • 4 medium Carrots cut into even pieces
  • 8 ounces Mushrooms cremini or button

For Seasoning and Thickening

  • 2 sprigs Fresh Thyme or dried as a substitute
  • 2 leaves Bay Leaves remove before serving
  • to taste Salt
  • to taste Pepper
  • 1 quarter cup All-Purpose Flour or cornstarch for gluten-free

Garnish

  • 2 tablespoons Fresh Parsley chopped

Instructions
 

  • Prep Ingredients: Cut the beef into 1-2 inch cubes and season with salt and pepper. Chop the bacon, onions, garlic, carrots, and mushrooms into even pieces.
  • Sauté Bacon: Cook diced bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer bacon to the slow cooker, leaving drippings in the pan.
  • Brown Beef: Brown the beef cubes in batches in the skillet for 3-4 minutes on each side. Transfer to slow cooker.
  • Sauté Aromatics: Sauté chopped onions and garlic in reserved drippings until translucent, about 3-4 minutes, then add to slow cooker.
  • Combine Ingredients: Add carrots, mushrooms, red wine, beef broth, tomato paste, thyme, and bay leaves to the slow cooker and stir.
  • Slow Cook: Cover and cook on low for 8 hours or high for 4 hours, until beef is fork-tender.
  • Thicken Sauce: Mix flour with some cooking liquid to create a slurry, stir back into slow cooker 30 minutes before serving.
  • Serve: Remove bay leaves, adjust seasoning if needed, serve hot garnished with parsley.

Browning the beef and bacon is key for flavor. Mix flour with cooking liquid before adding to avoid lumps. Adjust seasoning during reheating as flavors may mellow.
