  • 1 cup Plant-Based Milk unsweetened almond, soy, oat, or coconut milk
  • 1/4 cup Chickpea Flour (Besan) substitute with cornstarch for gluten-free
  • 2 tablespoons Nutritional Yeast can substitute with vegan parmesan
  • 1/2 cup Vegetable Broth opt for low-sodium
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dried Herbs (Thyme, Rosemary, Oregano) or use fresh herbs
  • 1 teaspoon Smoked Paprika or regular paprika
  • to taste Black Pepper
  • to taste Salt

For Cooking

  • 4 slices Bread thick slices of sourdough or baguette
  • 2 tablespoons Olive Oil (or Vegan Butter)

  • Whisk together the plant-based milk, chickpea flour, nutritional yeast, vegetable broth, garlic powder, onion powder, dried herbs, smoked paprika, salt, and black pepper in a mixing bowl until smooth.
  • Dip thick slices of your chosen bread into the custard mixture, ensuring each side is soaked for a few seconds.
  • Preheat a non-stick skillet or griddle over medium heat. Add olive oil or vegan butter.
  • Place the soaked bread slices onto the heated pan and cook for 3-4 minutes until golden brown, then flip and repeat.
  • Continue with remaining slices, adding more oil as needed.
  • Plate your Vegan Espresso French Toast and garnish with toppings like avocado or sautéed veggies.

Notes

For an extra kick, add a sprinkle of chili flakes on top before serving.
