Ingredients
  

For the Fish

  • 4 fillets Fish fillets (cod, halibut, or sea bass) Main protein source.
  • ¼ cup Extra virgin Olive Oil Helps keep the fish moist.

For the Marinade

  • 6 sprigs Fresh Thyme Finely chopped, fresh is ideal.
  • 3 sprigs Fresh Rosemary Finely chopped, or ½ tsp dried.
  • 4 cloves Garlic Minced.
  • 1 tsp Lemon Zest For concentrated lemon flavor.
  • 1 tbsp Fresh Lemon Juice Can substitute with lime juice.
  • 1 tbsp Sweet Chili Sauce Adds sweetness, can replace with honey.
  • ½ tsp Salt Adjust according to taste.
  • ½ tsp Black Pepper For balance.

For the Vegetables

  • 1 cup Cherry Tomatoes Halved.
  • ½ cup Pitted Olives Kalamata or Gaeta preferred.

For Garnish

  • 2 tsp Fresh Parsley Chopped.
  • 1 tsp Fresh Basil Chopped, optional.

Instructions
 

Preparation

  • Pat fish fillets dry with paper towels.
  • In a bowl, whisk together thyme, rosemary, garlic, lemon zest, lemon juice, sweet chili sauce, salt, pepper, and olive oil.
  • Pour the marinade over the fish and coat evenly. Let sit for 15-30 minutes at room temperature.
  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the fish on the baking sheet. Scatter cherry tomatoes and olives around, drizzling with remaining marinade.
  • Bake for 12-18 minutes until the fish flakes easily.
  • Let the dish rest for 3-5 minutes, then garnish with fresh parsley.

Notes

Optional: Sprinkle with chili flakes for extra heat.
