Ingredients
  

For the Crust

  • 200 grams Digestive Biscuits Crushed finely
  • 100 grams Butter Melted

For the Cheesecake Filling

  • 400 grams Cream Cheese Full-fat
  • 200 grams Mint Aero Chocolate Chopped
  • 100 grams Powdered Sugar
  • 250 ml Heavy Cream Whipped
  • 10 grams Gelatin For setting
  • 1 teaspoon Vanilla Extract

For the Topping

  • 250 ml Whipped Cream
  • 50 grams Mint Aero Shavings For garnish

Instructions
 

Making the Bars

  • Preheat the oven to 325°F (163°C) and line a baking dish with parchment paper.
  • Crush the digestive biscuits into fine crumbs.
  • Combine crushed biscuits with melted butter and press into the baking dish.
  • Chop the Mint Aero chocolate into small pieces.
  • Beat cream cheese until smooth, then gradually add powdered sugar, vanilla, and chopped Mint Aero.
  • Whip the heavy cream until stiff peaks form and fold it into the cream cheese mixture.
  • Prepare gelatin according to package instructions and fold it into the cheesecake mixture.
  • Pour the cheesecake filling over the crust and refrigerate for at least 4 hours.
  • Once set, top with whipped cream and garnish with Mint Aero shavings.
  • Cut into squares and serve.

Notes

Optional: Top with fresh mint leaves for a refreshing finish. For neat cuts, dip the knife in hot water between slices.
