Ingredients
  

For the Crust

  • 24 pieces Oreos finely crushed
  • 1/2 cup Butter melted; can substitute with coconut oil

For the Cheesecake Filling

  • 16 oz Cream Cheese full-fat, softened
  • 3/4 cup Sugar granulated or alternative sweeteners
  • 1/2 cup Sour Cream or Greek yogurt
  • 3 large Eggs room-temperature
  • 1 teaspoon Mint Extract omit for classic cheesecake
  • 1 drop Green Food Coloring optional

For the Topping

  • 1 cup Heavy Cream for whipped topping
  • 2 tablespoons Powdered Sugar can be omitted for less sweetness

Step-by-Step Instructions

  • Preheat your oven to 325°F (163°C) and line a baking pan with parchment paper.
  • Crush the Oreos into fine crumbs and mix with melted butter. Press firmly into the bottom of the pan and bake for 10 minutes. Let cool.
  • Beat the cream cheese until fluffy. Gradually add sugar, sour cream, and eggs. Mix until well incorporated.
  • Add mint extract and food coloring. Stir until fully combined.
  • Pour the cheesecake filling over the cooled crust and bake for 40-45 minutes until edges are set and center is slightly jiggly.
  • Allow to cool at room temperature, then refrigerate overnight.
  • Whip the heavy cream with powdered sugar until stiff peaks form.
  • Cut into bars and serve with whipped cream.
