Ingredients
  

Dough

  • 3 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon instant yeast Active dry yeast works with adjustments.
  • 1 tablespoon sugar Optional for savory version.
  • 1 teaspoon salt Essential for flavor.
  • 2 tablespoons olive oil Melted butter is an alternative.
  • 1 cup warm water Ensure it's 100°F to 110°F.

Filling

  • 1 cup Akkawi cheese Can substitute with feta.
  • 1 cup mozzarella cheese Try provolone as a substitute.
  • 2 tablespoons za’atar spice Omit for plain version.

Garnishing

  • 1/4 cup fresh parsley Fresh mint can be an alternative.

Instructions
 

Dough Preparation

  • In a large mixing bowl, combine all-purpose flour, instant yeast, sugar, and salt. Gradually pour in olive oil and warm water, stirring until a dough forms.
  • Knead for 8-10 minutes until smooth and elastic. Allow it to rise for 1 hour until doubled in size.

Baking

  • Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Once risen, divide the dough into 4 equal pieces. Roll each into a 6-inch circle.
  • Mix together the Akkawi and mozzarella cheeses, then spread this mixture onto the rolled dough. Drizzle olive oil and sprinkle with za’atar.
  • Transfer flatbreads to the oven and bake for 10-12 minutes until golden brown and cheese is melting.
  • Remove from oven, garnish with fresh parsley, and serve warm.

Notes

Serve with yogurt dips for extra zing.
