Zucchini Fries

  • 2 medium Zucchini
  • 1 cup Parmesan Cheese or nutritional yeast for vegan option
  • 1 cup Breadcrumbs use gluten-free panko for gluten-free option
  • 1 large Egg or flaxseed 'egg' for vegan option
  • to spray Olive Oil Spray

Preparation

  • Preheat the air fryer to 375°F (190°C).
  • Pat the zucchini dry with a paper towel.
  • Cut the zucchini into fry shapes, about 1/4 to 1/2-inch thick.
  • Beat the egg in a bowl. In a separate bowl, mix the breadcrumbs with the parmesan cheese and spices.
  • Dip each zucchini piece into the beaten egg, then coat with the breadcrumb mixture.
  • Arrange the coated zucchini fries in the air fryer basket in a single layer and spray lightly with olive oil.
  • Cook for 8-10 minutes, flipping halfway through.
  • Serve immediately with your favorite dipping sauce.

Notes

Add a sprinkle of fresh parsley on top for a pop of color!
