  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup mini marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, beat the eggs, milk, vanilla extract, and melted butter until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Once cooled, top each cupcake with mini marshmallows and toast using a kitchen torch or under the broiler for one minute.
