  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • Mini marshmallows (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Roast sweet potatoes until tender, about 45-60 minutes. Cool and mash.
  2. In a bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. Stir in mashed sweet potatoes.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add to wet ingredients until just combined.
  5. Line a muffin tin with liners and fill each about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Top cooled cupcakes with mini marshmallows and toast lightly if desired.
