  • 3/4 cup dark brown sugar

  • 1/2 cup heavy cream (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour and baking powder.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time followed by the vanilla extract until smooth.

  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fill cupcake liners about two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before topping with whipped cream and drizzling warm toffee sauce if desired.
