  • 2 large eggs (whole)
  • Zest and juice of 2 lemons (freshly squeezed)
  • 3 egg whites
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and 1/2 cup granulated sugar.
  3. In another bowl, cream together butter and remaining sugar until fluffy. Add eggs, lemon zest, and juice; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Spoon batter into prepared liners and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  6. For the meringue, beat egg whites until soft peaks form; gradually add powdered sugar until stiff peaks form. Top each cupcake with meringue.
  7. Toast the meringue lightly with a kitchen torch until golden brown.
