  • 3/4 cup granulated sugar (150g)
  • 3 large eggs
  • 1/2 cup unsalted butter, melted (115g)
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a food processor, pulse the blanched almonds until finely ground but not turned into almond butter.
  3. In a large bowl, melt the unsalted butter and let it cool slightly. Add sugar, eggs, and vanilla extract; whisk until smooth.
  4. Fold in the ground almonds and baking powder until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for about ten minutes before transferring it to a wire rack to cool completely.
