  • 1 tsp vanilla extract
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp Biscoff spread
  • ¼ cup cream cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour and baking powder.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, followed by vanilla.
  4. Gradually mix in dry ingredients alternating with milk. Fold in crushed Biscoff cookies.
  5. Fill liners two-thirds full and bake for 18-20 minutes until golden brown. Cool completely before frosting.
