  • 3 large eggs
  • 8 ounces cream cheese, softened
  • 4 ounces unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking soda, and a pinch of salt.
  3. In another bowl, mix the vegetable oil, sugar, eggs, buttermilk, vinegar, and red food coloring until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool for ten minutes before transferring to wire racks. Once cool, prepare the frosting by beating cream cheese and butter until smooth; gradually add powdered sugar and vanilla.
  7. Frost between layers and on top of the cooled cakes.
