  • For the Frosting: 3 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until light and fluffy, then gradually add sugar.
  4. Beat in eggs one at a time along with vanilla extract.
  5. Alternate adding the dry mixture and milk into the butter mix until just combined.
  6. Pour batter into muffin tins, filling each about two-thirds full.
  7. Bake for 18-20 minutes until a toothpick comes out clean. Cool before frosting.
  8. For frosting, beat butter until creamy, then add powdered sugar and heavy cream until smooth. Mix in vanilla extract.
