  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar

  • ½ cup whole milk
  • 2 tsp vanilla extract
  • ¼ tsp peppermint extract
  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 2 tbsp heavy cream
  • Pink food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour and baking powder.
  3. Cream softened butter and sugar until fluffy. Add eggs one at a time, along with vanilla and peppermint extracts.
  4. Gradually mix in dry ingredients followed by milk until smooth.
  5. Spoon batter into liners, filling two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with pink frosting decorated with sprinkles.
