  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three round cake pans.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy (about 5 minutes).
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and butterfly pea flower powder. Gradually add dry ingredients to the wet mixture while alternating with milk.
  5. Divide the batter into three bowls; keep one as is and add more butterfly pea flower powder to each subsequent bowl for darker shades.
  6. Pour each colored batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
