  • 3 cups powdered sugar (for frosting)
  • ½ cup unsalted butter (softened, for frosting)
  • food coloring (various colors, for frosting)
  • white candy melts (for eyeballs)
  • M&M’s or Skittles (for eyeballs)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, sugar, cocoa powder, and baking powder.
  3. In another bowl, cream softened butter; add eggs one at a time, mixing in milk and vanilla until smooth.
  4. Combine wet ingredients into dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. Prepare frosting by beating softened butter with powdered sugar; color as desired. Frost cooled cupcakes and top with candy eyeballs.
