  • 3 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt until well combined.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lime juice and chopped mint leaves.
  4. Gradually add dry ingredients alternately with milk until batter is smooth.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until golden brown. Cool completely before frosting.
  6. For frosting, mix powdered sugar and butter until creamy; add heavy cream as needed for consistency.
