  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking pan.
  2. In a medium bowl, mix flour, brown sugar, cinnamon, and melted butter until crumbly to create the topping; set aside.
  3. In a large bowl, whisk together pumpkin puree, vegetable oil, eggs, granulated sugar, and salt until smooth.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt; gradually mix into wet ingredients until just combined.
  5. Pour half of the batter into the greased pan; sprinkle with half of the crumb topping. Add remaining batter and top with leftover crumbs.
  6. Bake for 40-45 minutes until golden brown and a toothpick comes out clean. Cool slightly before serving.
