  • 2 large eggs
  • 2 tsp vanilla extract

  • Gel food coloring (various colors)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and powdered sugar until smooth.
  3. Add eggs one at a time along with vanilla and peppermint extracts; mix well.
  4. In another bowl, whisk flour until lump-free, then gradually incorporate into wet ingredients until just combined.
  5. Divide dough in half and mix gel food coloring into each half until evenly distributed.
  6. Roll each colored dough into logs and press them together. Chill in the fridge for one hour.
  7. Slice chilled dough into half-inch rounds and place on prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are golden brown.
