  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 tbsp heavy cream
  • Mini chocolate chips (for eyes)
  • Candy corn or orange sprinkles (for noses)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin pan with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat together eggs, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating the butter until creamy; gradually add powdered sugar and heavy cream until desired texture is reached.
  7. Frost cooled cupcakes generously. Decorate with mini chocolate chips for eyes and candy corn or sprinkles for noses.
