  3. In another bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing in vanilla and peppermint extracts until smooth.
  5. Gradually combine dry ingredients with wet ingredients, alternating with milk until just mixed.
  6. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting.
