  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with watermelon puree until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, beat cream cheese until smooth; gradually add powdered sugar and heavy cream until fluffy. Frost cooled cupcakes.
