  • 1 box (15.25 oz) yellow cake mix
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup canned pineapple chunks, drained
  • 1 cup chopped pecans
  • 1 container (8 oz) Cool Whip
  • 2 cups powdered sugar
  • 3 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two round cake pans.
  2. In a large bowl, combine the yellow cake mix and pistachio pudding mix.
  3. Add eggs, oil, water, and drained pineapple; mix until smooth.
  4. Gently fold in chopped pecans.
  5. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting with a mixture of powdered sugar and milk topped with Cool Whip.
