  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast for 45-60 minutes until tender. Let cool, then peel and mash.
  2. In a bowl, combine mashed sweet potatoes, melted butter, and sugar until smooth. Beat in eggs one at a time.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually fold dry ingredients into the sweet potato mixture until just combined.
  4. Line a muffin tin with cupcake liners and fill each about two-thirds full with batter. Bake for 20-25 minutes or until a toothpick comes out clean.
  5. For the frosting, beat softened butter and marshmallows until fluffy. Gradually add powdered sugar to reach desired sweetness.
  6. Once cupcakes are cool, frost generously with marshmallow frosting.
