Ingredients

Scale
  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Boil or steam the sweet potato until soft (about 15-20 minutes), then let it cool, peel, and mash until smooth.
  3. In a large bowl, whisk together flour, baking powder, and cinnamon.
  4. In another bowl, cream together brown sugar and mashed sweet potato until combined; mix in vanilla extract.
  5. Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Scoop tablespoon-sized balls onto the prepared baking sheets, spacing about two inches apart. Bake for 12-15 minutes until lightly golden on the edges. Cool on wire racks.
