  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1/3 cup your favorite BBQ sauce
  • 1/4 cup bacon crumbles (for topping)
  • 2 tbsp chopped green onions (for topping)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. 2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. 3. In another bowl, beat eggs, then mix in milk and vegetable oil. Combine wet and dry ingredients until just mixed.
  4. 4. Gently fold in half of the BBQ sauce into the batter.
  5. 5. Spoon batter into cupcake tins until two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. 6. Allow cupcakes to cool completely before frosting with remaining BBQ sauce. Top with bacon crumbles and green onions.
