  • 1/3 cup strawberry jam

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until fluffy. Add the egg yolk and vanilla; mix until well combined. Gradually stir in flour until a soft dough forms.
  3. Roll tablespoonfuls of dough into balls and place them on the prepared baking sheets, spaced two inches apart.
  4. Use your thumb or the back of a spoon to create an indentation in each ball, then fill with strawberry jam.
  5. Bake for 12-15 minutes or until lightly golden around the edges. Allow to cool on the baking sheet for five minutes before transferring to wire racks.
