  • 1 tbsp lemon zest

  • 2 cups powdered sugar
  • ½ cup unsalted butter (softened)
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy; add eggs one at a time.
  4. Gradually mix dry ingredients into the wet mixture, alternating with milk until just combined.
  5. Fold in chopped strawberries and lemon zest.
  6. Spoon batter into liners, filling two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
