  • 1 cup granulated sugar
  • 2 large eggs

  • 1 cup fresh strawberries (finely chopped)
  • ½ cup heavy whipping cream
  • 2 cups powdered sugar
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time followed by vanilla extract.
  4. Gradually incorporate dry ingredients while alternating with milk if using. Gently fold in chopped strawberries.
  5. Pour batter into prepared muffin pans, filling them two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, whip heavy cream with powdered sugar and orange zest until soft peaks form. Frost cooled cupcakes generously.
