  • 2 tbsp freshly squeezed lemon juice
  • ½ cup whole milk
  • 2 cups powdered sugar
  • ½ cup unsalted butter (room temperature)
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; then add lemon juice, strawberries, and basil.
  5. Gradually mix in dry ingredients alternating with milk until just combined.
  6. Spoon batter into liners about two-thirds full and bake for 20 minutes or until a toothpick comes out clean. Cool completely before frosting.
