  • 1 cup Medjool dates, pitted and chopped
  • 1 cup water
  • ½ cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ cup heavy cream
  • ½ cup brown sugar
  • Pinch of salt

Instructions

  1. Soak the chopped Medjool dates in water for about 10 minutes until soft.
  2. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  3. In a bowl, cream together the butter and sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  4. In another bowl, whisk together flour and baking powder; fold into the butter mixture.
  5. Stir in the soaked dates along with their liquid until well combined.
  6. Pour batter into the prepared pan and bake for about 35 minutes or until a toothpick comes out clean.
  7. For the sauce, heat cream and brown sugar together in a saucepan until smooth; add a pinch of salt.
  8. Drizzle warm sauce over cooled cake before serving.
