  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon

  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp cinnamon sugar mixture (1 tbsp sugar + ½ tsp cinnamon)

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In a large bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Add eggs one at a time to the butter mixture, mixing well after each addition.
  5. Gradually add the dry ingredients alternately with milk until just combined.
  6. Fill each muffin cup two-thirds full and sprinkle generously with the cinnamon sugar mixture.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool before serving.
