  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 tsp ground cinnamon (divided)
  • 16 oz cream cheese, softened
  • 1 cup full-fat sour cream
  • 2 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix graham cracker crumbs, melted butter, ¼ cup sugar, and ½ tsp cinnamon until crumbly; press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, then sour cream, vanilla extract, and eggs one at a time until fully incorporated.
  4. Mix in the remaining cinnamon and pour over the crust. Bake for 30-35 minutes until slightly jiggly in the center.
  5. Let cool completely before refrigerating for at least two hours. Cut into squares and serve chilled or at room temperature.
