  • ½ cup unsalted butter (room temperature)
  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1 cup granulated sugar (for salted caramel filling)
  • ½ cup heavy cream (for salted caramel filling)
  • 1 tsp sea salt (for salted caramel filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix flour, sugar, baking powder, and salt. Add softened butter and mix until crumbly.
  3. In another bowl, whisk eggs, milk, and vanilla until combined. Gradually add to the dry mixture, stirring until smooth.
  4. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until golden brown.
  5. For the salted caramel filling, heat sugar in a saucepan until amber-colored, then stir in heavy cream and sea salt until smooth.
  6. Once cupcakes are cooled, create a hole in each using an apple corer or spoon and fill generously with salted caramel.
