  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh blueberries, pureed

Instructions

  1. Preheat oven to 325°F (160°C). Grease an 8×8-inch baking dish.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into the bottom of the dish to form the crust.
  3. In another bowl, beat cream cheese until smooth; add remaining sugar, sour cream, eggs, and vanilla. Mix until creamy.
  4. Puree strawberries and blueberries in separate bowls.
  5. Pour half of the cheesecake mixture over the crust. Add spoonfuls of strawberry puree on top. Pour remaining cheesecake mixture and dollop blueberry puree; swirl gently with a knife.
  6. Bake for 40-45 minutes until slightly jiggly in the center. Let cool completely before slicing.
