  • 2 large eggs
  • 1 cup buttermilk
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 cup crushed Oreos (for filling)
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 3 cups powdered sugar, sifted
  • Additional crushed Oreos for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix vegetable oil, sugar, eggs, buttermilk, red food coloring, and vanilla until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients; stir until just combined.
  5. Divide the batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. While cooling, whip together cream cheese and heavy cream until fluffy; gradually add powdered sugar until smooth.
  7. Once cooled, layer cakes with frosting and crushed Oreos between layers. Frost the top and sides generously.
