  • ½ cup buttermilk
  • For Cream Cheese Frosting: 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat together sugar and vegetable oil until combined. Add eggs one at a time, then stir in red food coloring and vanilla extract followed by buttermilk.
  4. Gradually add dry ingredients to the wet mixture while mixing on low speed until just combined.
  5. Fill the cupcake liners two-thirds full with batter and bake for about 20-22 minutes or until a toothpick comes out clean.
  6. While cupcakes cool, whip cream cheese and butter until smooth; gradually add powdered sugar and vanilla extract until creamy.
  7. Once cooled, frost cupcakes generously.
