  • ½ cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt until combined.
  3. In another bowl, mix sugar, vegetable oil, buttermilk, eggs, food coloring, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined; don’t overmix.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 20–22 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool entirely before frosting with cream cheese frosting.
