  3. In another bowl, mix vegetable oil, sugar, buttermilk, eggs, food coloring, and vanilla until smooth.
  4. Gradually combine the wet mixture with the dry ingredients, stirring gently until just mixed.
  5. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla until fluffy. Frost cooled cupcakes.
