  • 1/2 cup unsalted butter (room temperature)

  • 1 cup fresh raspberries (plus extra for puree)
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter (room temperature) for frosting
  • 1 tbsp milk for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cream the butter and sugar in another bowl until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
  5. Gently fold in fresh raspberries and swirl some raspberry puree on top before filling cupcake liners two-thirds full.
  6. Bake for about 20 minutes or until golden brown. Cool before frosting.
