  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1 cup fresh or frozen raspberries
  • ½ cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Add eggs one at a time along with vanilla extract; mix until fully incorporated.
  4. In another bowl, whisk flour and baking powder together. Gradually add to the wet mixture, mixing on low speed until just combined.
  5. In a small bowl, mash raspberries with raspberry jam until smooth but slightly chunky.
  6. Take half of the cookie dough and dollop spoonfuls of the raspberry mixture on top; cover with more dough.
  7. Gently swirl the raspberry mixture through the dough. Drop rounded tablespoons onto prepared sheets about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
