  • 1 tsp vanilla extract
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 8 oz cream cheese, softened
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat sugar and butter until fluffy. Add eggs one at a time, then stir in pumpkin puree and vanilla.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Fill muffin tins two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool completely on a wire rack before frosting cupcakes with cream cheese frosting.
