  • ¾ cup granulated sugar

  • 1 tsp vanilla extract
  • ½ cup unsalted butter, softened
  • For the Frosting: 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat sugar and butter until fluffy. Add eggs one at a time, then mix in milk and vanilla. Fold in pumpkin puree.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Fill muffin tins about two-thirds full and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
  6. For the frosting, beat cream cheese until smooth; gradually add powdered sugar then mix in heavy cream until fluffy. Frost cooled cupcakes generously.
