Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time along with vanilla extract, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and pumpkin pie spice.
  4. Gradually mix the dry ingredients into the wet mixture, alternating with pumpkin puree, until just combined.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
